Meat:
- 2 3/4 lbs beef fillet, trimmed of all sinew, backstrap removed
- 3 lbs Italian sausages, 1-inch thick, 4-inches long, sweet or hot
- 18 king prawns tails
- 12 larges shrimp (21/30 per pound), shelled and deveined
- 1 1/2 lbs ground lean trukey, white meat only
- 1/2 lbs skinless, boneless chicken breast, thinly sliced
- 1 pound boneless sirloin, trimmed of excess fat
Produce:
- 1 small bibb or boston lettuce
- 3 medium carrot
- 3 scallions
- 4 scallions , dark-green parts only
- 2 1/2 cups bean sprouts
- 1 stick celery
- 8 limes
- 3 lemongrass stalks
- 9 cloves garlic
- 1 medium celery rib
- 1 large eggplant
- 6 medium-sizeds tomatoes
- 2 large ripe, red tomatoes

- 1 can or bag (bulk) of dry-roasted peanuts
- 1 bottle of olive oil
- 1 bottle of vegetable oil
- 1 bottle of fish sauce
- 5 lb bag of Sugar
- 1 jar of Kalamata olives
- 1 box of light-brown sugar
- 1 bottle of canola oil
- 1 bottle of extra virgin olive oil
- 1 bottle of ketchup
- 2 box of corn starch
Dairy & Poultry:
- 1 carton of half-and-half
Seasoning, Spices & Herbs:
- 1 small bunch thyme
- 1 small bunch of fresh mint
- 1 medium bunch of basil leaves
- 1 cilantro sprig for garnish (optional)

- 1 grinder full of white pepper corns
