Meat:
- 4 skinless salmon fillets (11/2 to 2 lbs total), each about 1-inch thick
- 1 x 3 1/2 lb chicken
- 2 1/2 lbs bone-in country-style spare ribs
- 6 veals escalopes
- 1 fillet steak cut into strips
- 6 thin slice smoked ham (preferably Parma ham)
Produce:
- 2 green onions
- 1 large onion
- 1 cup snap peas
- 10 cloves garlics
- 2 oranges for juice
- 6 scallions
- 1/2 lbs green beans
- 4 green cardamoms pods
- 2 1/2 ounces shitake mushrooms
- 1 large ripe tomato
Pantry:
- 1 small tin of Italian tomato sauce
- 1 small bottle of brandy
- 1 bottle of white Vermouth
- 4 dried red chiles , whole
- 1 tin of tomato sauce
- 1 bottle of sesame oil
- 2 carrots
- 2 lemon for juicing
- 1 bottle of canola oil
- 1 bottle of extra virgin olive oil
- 1 bottle of teriyaki sauce

Dairy & Poultry:

Seasoning, Spices & Herbs:
- 2 inches piece of ginger
- 1 bunch of fresh oregano leaves or 1 tsp (5ml) dried
- 1 cinnamon stick 1/2-inch thick
- 1 bottle of turmeric
- 1 grinder filled with black pepper corns
- 1 large bunch of basil leaves
- 1 small bunch of fresh cilantro
- 1 canister of Kosher or Sea salt
- 22 fresh curry leaves , or 30 frozen curry leaves, torn into pieces
