Turkey and Roasted Red Pepper Sandwiches on Focaccia
- 1/2 cups cream cheese, low-fat whipped
- 2 tbsps minced, sweet onions
- 1 tbsp freshly chopped tarragon
- 4 small loaves focaccia , sliced in half
- 3/4 lbs sliced smoked trukey breasts (or leftovers from turkey dinner)
- 4 slices roasted red bell peppers , from a jar (or lefteovers from turkey dinner)
- 4 lettuce leaves , green leaf, bibb or romaine, shredded
1. In a small mixing bowl, combine the cream cheese, onion and tarragon.
2. Lay the focaccia out and spread the cream cheese mixture on each of the slices. Divide the turkey among the sandwiches and place one slice of the roasted red pepper on each sandwich. Divide the shredded lettuce among the sandwiches and place the focaccia tops on each sandwich.
3. Cut the sandwiches in half on the diagonal and serve.
