Pasta with Marinara Sauce
  • 1/4 cups extra virgin olive oil
  • 2 garlic cloves , minced
  • 28 ozs canned Italian plum tomatoes with juice
  • 1/2 tsps chili flakes, or to taste
  • 1/2 cups loosley packed oregano leaves or 1 tsp (5ml) dried
  • 1/2 cups loosely packed basil leaves, shredded
  • 1 lb pasta

 

1.  When fresh tomatoes are out of season, you can still create a fabulous sauce with a can of plum tomatoes.

2.  Place Food Mill over a large bowl and pass tomatoes and juice through mill. Choose a fine disk for a smooth sauce, the coarse disk for a chunky sauce. Discard solids.

3.  Heat oil in a large skillet over medium heat. Add garlic and stir 1 minute. Add tomatoes, chili flakes and salt and pepper to taste. Bring to a boil, reduce heat and cook 10 minutes, stirring occasionally, until sauce thickens. Add oregano and basil and cook another 3 minutes.

Serve with salad
