- 1 tbsp Olive oil
- 1 large onion, finely chopped
- 1/2 bell peppers , finely chopped
- 1 carrot cut and grated
- 1 15 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 1/2 cups milk
- 1 tbsp Worcestershire sauce
- 3 larges eggs
- 1 1/2 tsps Salt
- 1/2 tsps black pepper
- 2 pieces bread
- 1/2 cups catsup
- 2 1/2 lbs lean ground beef
- 1/2 lbs ground pork
- 4 pieces of bacon, for garnish
1. In a skillet, sauté onion, bell pepper and carrots in olive oil until tender. Add diced tomatoes and tomato sauce and cook over medium-low heat for about 15 minutes. Set aside.
2. In a large bowl, beat eggs and add milk, catsup, Worcestershire sauce, salt and pepper. To this, add the two slices of bread and let soak, then mix well.
3. Into this, mix the ground beef and pork using hands if necessary. Then thoroughly combine the sautéed onions, pepper, carrots and tomatoes into the meat mixture. Place in two loaf pans that have been sprayed with cooking spray. Garnish with catsup and bacon slices.
4. Cook a 350° F for about 1 hour and 15 minutes.
