Thai Beef with Basil
- 3 tbsps Asion fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 lb beef top round
- 1 tbsp vegetable oil
- 1 tsp ,vegetable oil
- 1 lb jumbo sweet onion, cut into 1/4-inch slices
- 3 red chiles long, orserrano chiles, seeded and thinly scliced
- 3 garlic cloves , cut into loing thin slices
- 2 tsps minced, peeled fresh ginger
- 1 cup loosely packed basil leaves
1. In medium bowl, combine fish sauce, soy sauce, and brown sugar. Cut round steak lengthwise in half, then cut into 1/8-nch thick slices across the grain. Add beef to fish-sauce mixture, tossing to coat well, cover and refrigerate beef 30 minutes to marinate.
2. In a 12-inch skillet, heat 1 tbsp oil over high heat until very hot. Add beef mixture and cook, stirring frequently (stir-frying), just until beef is no longer pink, about 1 minute. Transfer beef to bowl.
3. Add remaining 1 tsp oil to skillet. Add onion and cook, stir-frying, until tender-crisp, about 3 minutes. Stir in chiles, garlic and ginger; cook 30 seconds.
4. Return beef to skillet and add basil, heat through.
Serves: 4 main-dish servings
